The Fullerton Bay Hotel Singapore

13 Jan, 2019
01

Overview

Staying here won’t be cheap, but we felt its Deluxe Room was worth it. You also get spectacular views of the Marina Bay Sands Singapore from the rooftop swimming pool.

  • Median Room Price: SGD777[1]

Staying at the Fullerton Bay Hotel Singapore probably won’t be cheap. Even if you pick its lowest-tier Deluxe Room, you’re probably still going to be paying a lot more than what the other hotels around the Marina Bay are charging. But we really liked that Deluxe Room, from its size and furnishings all the way down to the little details and touches. While its rooftop swimming pool wasn’t especially large, we still found ourselves slipping easily into serenity as it wasn’t crowded — probably a function of the hotel’s capacity and premium pricing. We just wished its food — while decent — was as exceptional as the rest of the hotel.

With 45–50m2 of space, the Deluxe Room is larger than most hotel rooms but doesn’t skimp on the furniture, making this one of our favourite hotel rooms in Singapore. With two velvet chairs and a coffee table in one corner and a work desk on the other, the room felt balanced in its layout and use of space. Mirrors on the walls and floor-to ceiling windows further reinforced the feeling of spaciousness. The windows opened to a balcony overlooking the historic Customs House. Numerous little details and touches further elevated this room above the rest: fresh flowers on the desk, a Logitech Comfort Lapdesk laptop stand, and Domori chocolates with the turndown service.

Entertainment: The 46-inch TV, hooked up to a DVD player and Harman Kardon speaker, offers 33 channels and a library of free movies on demand. Our room included copies of Singapore Tatler, Fortune, and Preferred Travel magazines as well as the hotel’s Fullerton Stories and Fullerton Heritage books.

Sips and nibbles: In addition to TWG tea and Cadbury hot chocolate drink mixes, there was a Nespresso single-serve espresso machine. There were more drinks and snacks on the glass shelves and minifridge, but these weren’t free.

Bathroom

While not especially spacious, the bathroom was well-organised and furnished with a bathtub and separate shower and toilet rooms. While the toilet room’s glass sliding door was frosted for privacy — the shower room’s glass door was clear. No privacy for the bathtub either, which was next to the sink and a glass window looking into the bedroom. You can easily and completely cover the window with its motorised blinds if you’re in the mood for some alone time. A TV screen on the wall is available for company.

Toiletries: Bottega Veneta perfumed shower gel, shampoo, conditioner, and perfumed body lotion. There was also a jar of bath salts hanging over the bathtub. If you’re planning on soaking, pick up the phone and request for the hotel’s in-house bubble bath is available on request — we got four bottles of different scents.

Breakfast

  • Breakfast Rank: 3
  • Breakfast Opening Hours: 6:30–11:00am
  • Breakfast Price: SGD53[1]

With such a superb Deluxe Room, it’s a shame that the hotel’s breakfast buffet at its French restaurant La Brasserie fell short of our raised expectations. To be sure, it wasn’t bad — we just wished it was as exceptional as the rest of the hotel. The restaurant cleverly circumvents its lack of space for a sprawling buffet spread by offering a sizeable menu of dishes it can make to order. These included not just usual suspects like French toast, Belgian waffles, and buttermilk pancakes but also eggs Benedict and even beef steak with fried eggs and mushrooms. However, not everything works — we wouldn’t try its “egg surprise special” again — and we can’t think of many items we’d shout about.

In-room Dining

If you’re tempted to just stay in your room, the technology here makes it easy to pig out in your pyjamas. You order through the tablet computer in your room — hit a button, wait for the phone to ring to confirm your order, and your food’s on its way. We have to admit we were charmed by the service — the best we’ve experienced so far. Not only did the staff set the table for us, they also seated us and draped napkins on our laps — almost a restaurant experience. We even got complimentary bread rolls and chocolates.

If only the quality of the food were more consistent. The French onion soup was superb — savoury with soft onions and big croutons topped with melted gruyère cheese. But the leaf Caesar salad, decent as it was, felt overpriced and the signature duck confit seemed a little dry beneath its crispy skin. Our steak and frites didn’t quite hit the spot either — parts of the meat and its moisture seemed to lack flavour, almost like they were watered down.

And we wouldn’t order the profiteroles in-room unless you plan to eat them immediately — its side of ice cream arrived melting, its pitcher of cooling warm chocolate sauce solidifying. In any case, we wished the kitchen had been much more generous with the Chantilly cream filling. Instead, we’d love another serving of the mousse au chocolat. Dig deep so you get all three layers of dark, milk, and white chocolate with each spoonful and take a bite of Amarena cherry to balance that sweet richness.

Drinks: Soft drinks, juices (fresh and chilled), water, milk shakes, smoothies, coffee, tea, chocolate, and milk. The alcohol selection includes spirits, red and white wines, and champagne.

Pool

  • Pool Rank: 4
  • Pool Opening Hours: 6:00am–10:00pm

Instead of hiding in your room, go to the rooftop where the swimming pool and a spectacular view of the iconic Marina Bay Sands Singapore awaits. The pool itself wasn’t especially large, but we still found ourselves slipping easily into serenity as it wasn’t crowded. That said, there weren’t many sun lounger chairs by the pool — grab them before they’re gone as the only other seats are in a corner without much of a view. Alternatively, slip into the two jacuzzi pools beside the swimming pool and enjoy views of the Fullerton Hotel Singapore and the Esplanade. Don’t worry if you forgot your sunblock or mosquito repellent — grab some here, complimentary. Just be aware the pool is next to the rooftop bar Lantern — it’s popular and can fill up with gawking members of the public.

But it also means you can get your poolside refreshments direct from the Lantern bar. The food was decent, though we’d hesitate to call it top notch. We found the butter-poached lobster roll with mayonnaise and truffle fries to be a solid choice. The juicy knobs of lobster nestled in the soft split bread roll were fresh and bouncy — superb and rich with a generous coating of mayonnaise. We were a little more split on the wagyu rendang beef rib pizza slabs with achar pickles. The rendang beef itself was tender as advertised, its deep and intense flavours pairing well against the acidity of the achar pickles. But spread on a thin crust coated with tomato sauce and melted cheese, its balance seemed to falter.

07

Bar

  • Bar Rank: 2
  • Bar Opening Hours: 10:00am–1:00am from Sunday to Thursday and 10:00am–2:00am on Friday, Saturday, and eves of public holidays.

Of course, you can hit the Lantern rooftop bar even if you’re dry and out of your swimwear. Just remember you’re not the only one — with its spectacular view of the Singapore, proximity to the central business district, and resident DJ[1], it’s massively popular. Time your visit to coincide with the three light shows each night at the Marina Bay Sands. The drink selection was solid, its cocktail menu centring on variations of the mojito, Singapore sling, vodka fruit cocktails, and gin (or vodka) and tonic.

Gym

  • Gym Rank: 12
  • Gym Opening Hours: 24 hours

If you plan to drag yourself out of bed the next morning to work out, we wouldn’t bother hitting the hotel gym — it’s the smallest we’ve seen. With so little space, it felt tight even when there was no one else — and its equipment is already pretty bare-bones. Go for a run instead — the Marina Bay is superb for it, or check out the hotel’s recommended trails. A jogging station even provides chilled towels and bottled water at the hotel entrance from 6–9am and 5–8pm daily.

09

Spa

  • Spa Opening Hours: 10:00am–10:00pm

There’s no spa onsite but hotel guests can access the wet facilities — saunas and steam rooms — at the Fullerton Spa, just a short walk away at the Fullerton Hotel Singapore. It’s not just any spa — the Fullerton Spa was the Luxury Business Hotel Spa regional winner for Southeast Asia in the 2017 and 2018 World Luxury Spa Awards. A 60-minute ultimate aromatherapy experience — one of the two signature rituals — or intensive muscle release massage meant to “instantly release pain and tension” costs SGD188[1].

10

Grounds

  • Hotel Grounds Rank: 8

Before you check out, remember to grab your free welcome drink at the Landing Point dining venue on the ground floor if you booked your stay through the hotel’s website. It’s the hotel’s signature Merlion cocktail — a fizzy mix of tequila, young ginger, lime, and club soda — but you can also get other cocktails, food, and afternoon tea here. Hope for pleasant weather — the view of the Marina Bay Sands is better from its outdoor seats. In the evenings, the Fullerton Fountain in the water also lights up.

Continue past the Landing Point and you’ll step into the stunning Clifford Pier. Once an actual pier built in 1927–1933, the heritage building has been refurbished into a restaurant focusing on local hawker food. Be sure to call ahead before dropping in for a meal — it’s very popular for weddings and other events which can take over the entire space.

You can learn more about the history of Clifford Pier and the rest of the waterfront on the hotel’s free Maritime Journey Tour — reserve a spot on the hotel website. If your visit to the Fullerton Spa has your curiosity piqued, there’s also a free Fullerton Monument Tour focusing on the Fullerton Hotel Singapore. Not free but even more involved are the hotel’s Fullerton Experiences programme, which include cooking, baking, and mixology demonstrations; picnics; and heritage walks.
