Breakfast Buffet: Spago at Marina Bay Sands

Overview

If the view and brag factor are more important to you than the food, queue for Spago. Otherwise, there are far better breakfast buffet options in the Marina Bay Sands.

When we first stayed at the Marina Bay Sands Singapore, it seemed obvious that we had to sample the breakfast buffet at Spago. After all, it was Wolfgang Puck’s restaurant! On the famous 57th floor of the Marina Bay Sands! With the view! Having tried it, we can now tell you it’s a great option if you want to breakfast at Wolfgang Puck’s restaurant on the famous 57th floor with the view. But if you’re there for the food, we’d suggest the similarly-priced breakfast buffets at Adrift by David Myers or — even better — Rise. While some of Spago’s breakfast buffet dishes were worth eating from its limited selection, we felt there were too few of them compared to Adrift or Rise. Still plan to go? Be early or prepare to queue. And if you don’t like being bathed in the heat and light of the morning sun, try to sit on the pool side of the restaurant.

American Food

While the limited selection of the breakfast buffet didn’t impress us, we were glad to see a live station offering not just eggs but also other dishes. We had little to complain about the spinach eggs Benedict — the yolk was runny, the English muffin buttery, and the entire dish was well-seasoned. The omelette was a little more watery than we liked, but we appreciated its generous fillings, which included a big savoury punch from bacon and smoked salmon.

The selection from the buffet table was also decent but very limited. The streaky pork bacon was crispy and crumbly while the roasted peewee potatoes were soft and well-seasoned. Compared to these, the chicken sausages were nothing remarkable but still better than the scrambled eggs which we felt were dry and powdery.

Asian Food

The live station also offered a few Asian dishes. We liked the nasi lemak which hit our table perfumed with the creamy flavours of coconut, though the sambal chili paste was more sweet than spicy. Its side of fried chicken wasn’t completely dry either. We couldn’t say the same of the bee hoon soto, an Indonesian vermicelli soup. Not only was the chicken dry, the soup was so spicy that it obliterated any nuance of flavour, to the point we couldn’t tell it was supposed to be soto.

Instead of the bee hoon soto, go for the vegetable fried bee hoon from the buffet table, fragrant and sweet from being fried with dark soy sauce. Pair this with the well-browned but still-moist pepper chicken. The vegetable lemak was also decent — soft and creamy but not too spicy.

We’d skip the siew mai and har gow which weren’t great, though still better than most dim sum served at other hotel breakfast buffets. The vegetable fried rice and sautéed mixed vegetables could have been more savoury while the bread of the chicken char siew bao seemed a little dry. We weren’t fans of the chicken and vegetable soup — it was thick with starch, tasted more sweet than savoury, and the chicken was dry.

Sweets

When you’re ready for something sweet, skip the pastries and get the muesli. Seriously. Mildly sweet, filled with fruit and honey, and topped with blueberries and crumble, we thought this was the best thing we tasted in the whole breakfast buffet.

We also liked the banana fritters from the live station with its thick crunchy batter encasing soft sweet banana inside. We thought the pancakes from the buffet table could have been fluffier but they were still good with maple syrup. From the pastry section, we thought the cinnamon-raisin muffins were decent and better than the blueberry and chocolate versions were a little dry. We’d also suggest a pain au chocolat, more for its creamy chocolate filling rather than the pastry itself which could have been crispier and flakier.

Without the redeeming chocolate filling, we’d skip the croissants and their sugar-topped variations as well as the Danish pastries. The French toast also made us sad. Sandwiching banana slices and a chocolate filling, it should’ve been a winner. Instead, it was thin, tough, and dry.
